100% Chardonnay.  Classic Method 36 month,  straw yellow with strokes of green gold brush. Intense and well structured with a very fine pearls but persistent, offers sweet ripe tones and rich minerals.

Area: Randazzo (Catania), NorthWest slopes of Mt Etna

Altitude: 750-950 metres a.s.l.

Soil: Volcanic- lava flow

Climate: Cool and ventilated with consistent changes between night and day

Density and yield: 9,000 plants per hectare, 4 kg/plant

Age and training: 7-15 years. Free standing, vertical position

Vinification: White vinification. Last decade of August.

produced with pupitre , dégorgement by hand

Tasting notes: A product of great fineness and elegance, well balanced with a discreet softness.Good intense aromatic persistence with an olfactive return of minerals and citrus hints, quite sapid, the foam is creamy and refined.

Food pairings: Fish and crustaceans, even raw, traditional Sicilian pasta dishes, soft cheese and white meat.
