Microclimate: Moderately cold winters, hot and windy summers 

Soil: Medium texture, strongly calcareous

Age, Training, Exposure: 15 years, on trellises with spurred cordon, South-West

Density/Hectare: 6.600 plants / hectare

Vinification: Harvesting in II/III decade of September. In red with Maceration on the skins for 12 days at temperature of 26-30 °C. Refinement in Stainless steel and bottle

Tasting notes: Brilliant ruby red. It shows on the nose very pleasant notes of red berry fruit, musk, plum and pure chocolate. Gently tannic, balanced and vivace. Aftertaste releases a special note of “carruba” a typical fruit of the region from a native sicilian oak tree

Food pairings: Red and white meat. Braised, Hard cheese, Roasts, wild game
