Altitude: 650-850 metres a.s.l.

Soil: Volcanic- lava flow

Climate: Cool and ventilated with consistent changes between night and day

Density and yield: 6,000 plants per hectare, 2 kg/plant

Age and training: 60 years. Free standing etneo, vertical position

Vinification: Harvesting in October. Lengthy and controlled maceration. Ageing 12 month in French Tonneau durmast oask, double toasted , second/third passage, following by long aging in the bottle minimum 3 years

Tasting notes: Loaded ruby colour with violet reflections. Intense and vibrant in the nose, elegant with a spiced scent of vanilla, hints of small fruit. Well balanced, with an elegant lava scent. In the mouth is warm and robust, very refined, persistence is excellent. Finishes with a striking softness and dynamism. Great potential for long ageing

Food pairings: Red meat, game bird or hare, hard cheese
