Soil: Volcanic- lava flow

Climate: Cool and ventilated with consistent changes between night and day

Density and yield: 6,000 plants per hectare, 3 kg/plant

Age and training: 10-30 years. Free standing, vertical position

Vinification: Harvesting in October. Lengthy and controlled maceration. Ageing 6 months in wood and 24 months in bottle

Tasting notes: Intense ruby red, violet reflections. Ripe and balsamic fruit with a scent of lava. In the mouth is sapid, dynamic with a long and constant structure

Food pairings: Excellent with red meat, well seasoned, perfect accompaniment for hard, aged cheese and lamb
